A quick chanterelle dish

I do not know about you, but I love chanterelles. Fortunately, the wait is over and the delicious mushrooms can now be bought again.

Here's an idea for a quick dish, which certainly tastes good on warmer days and is not too exhausting.

Ingredients for two persons

  • 500 g ready-to-cook chanterelles
  • 1 shot of cream
  • Butter, neutral oil
  • 1 cup of sour cream
  • 1 shot of milk
  • Salt, freshly ground black pepper
  • parsley
  • 100 g bacon cubes
  • 1-2 large onions
  • parsley
  • Röstis at will
  • maybe some cocktail tomatoes

preparation

  1. The Röstis are either prepared or bought from the TK in the oven.
  2. The onions are cut into small cubes, a pan heated with a little oil and a very generous piece of butter. Then fry the onions in the pan, add the bacon and fry for a short time. Add chanterelles, swing through and sizzle.
  3. In the meantime, mix the sour cream with a little milk to create a saucer-like consistency. Season with salt and pepper and add some parsley.
  4. Pepper the chanterelles and salt if necessary (Caution: bacon salt in my opinion already enough) and with a dash of cream "deglaze" and briefly simmer a little.
  5. Serve the röstis, chanterelles and tomatoes with the cold sauce and let it go well with a glass of wine or water!

Instead of real bacon I take the ham cubes, which are similar in taste, but lower in calories and still taste very good.

The cheap Rösti corners from the supermarket taste very good and also facilitate the work, although I actually prefer to do everything myself. But some things are just as good as they are.
