Acacia and elderflower jelly

- Take fresh acacia blossoms. Wash them and remove the pests.
- Then place the flowers without stems, in a plastic bowl and cover with thin lime slices (previously wash of course!) Of 3 - 4 pieces.
- Then sprinkle with good pure apple juice until they float in it.
- Then place a flat plate for weighting and cover with cellophane paper. Leave everything in a cool place for 2 days.
- Then pour everything through a tight tea strainer and place in a suitable saucepan.
- Now with Gelierzucker, (1 L = about 1 kg) according to the imprint on the sugar bag, sugar and bring everything boil up nicely. Then pour into glasses and then enjoy.
- The same can be done with elderflower, it tastes both variations.
