Alsatian tarte with yeast dough

Total preparation time: 28 min.
I know, there are many Flammkuchen recipes here, but strangely enough, no one with yeast dough, although the Alsatians originally did so.
You do not need much, for 2 people I make a tin with a very thin dough.
ingredients
- 120 ml of lukewarm water with a pinch of sugar
- very little yeast, about 6 g!
- 200 g of flour
- a bit of salt
- some pepper
- some nutmeg
preparation
- The yeast is crumbled into the lukewarm water and dissolved, stir once. This is then slowly stirred into the flour with the salt, kneaded with kneading hook and well until a tough dough is formed.
- The dough can now rest for a good hour in which I can prepare the topping:
- 2 onions, cut into rings or cubes as you like
- Cut 150 - 200 g ham slices into thin strips (ham cubes are of course too, but I think the stripes look better afterwards)
- Mix 1 cup crème fraîche with a little bit of cream, salt, pepper and a touch of nutmeg.
- The preparation is quite fast, so I still like to add a fresh crispy salad and heat the oven to 250 or even hotter if possible. Top and bottom heat of course.
- Roll out the dough very thinly on the greased sheet, make a small margin, add the cream mass, sprinkle the onions and ham over it and put it in the oven, the middle bar is most suitable.
- Now it's going pretty fast, depending on the oven takes 5-8 minutes, until the tarte is ready.
