Always cook steaks in the oven?
Roasting a steak is a science in itself. But despite all opinions, you do not always have to heat the oven to get a perfect steak.
I fry my meat hot on both sides, then reduce the heat of the cooking plate and cover the pan for 8-12 minutes.
Depending on the degree of frying, the steak is exactly what I want it to be. Personally, I prefer bleu. That means I should have a cherry-kernel spot inside.
Works well without having to preheat the oven.
Of course, meat quality plays a big role. It always bothered me that I had to waste energy to heat the oven just so I could put my meat in for a few minutes.
It works just as well with the lid. Just do not let it out of your sight.
