Apple pies with puff pastry

These juicy apple pies are the perfect snack for in between. After a few tries I found the perfect composition for the filling, which tastes like McDonalds.

ingredients

  • 1 packet of puff pastry (275 g)
  • 500 g peeled, pitted and diced apples
  • 60 g brown sugar
  • 70 ml of water
  • ½ teaspoon nutmeg
  • 2 tsp cornstarch
  • 1 pinch of salt
  • ½ vanilla pod
  • Bowl of half a lemon, grated
  • 2 teaspoons lemon juice
  • optional: raisins
  • a little lemon juice and powdered sugar


preparation

  1. Heat water and sugar in a large saucepan until the sugar has dissolved. Then add the apples, cinnamon, nutmeg, salt and lemon peel and bring to a boil. Reduce to medium heat and simmer with constant stirring until the apples are tender.
  2. Now add the starch, the lemon juice and the vanilla. If you want, you can also add raisins. Stir with a whisk until no more lumps are visible and the mixture becomes thick. Remove the filling from the cooking area and allow to cool.
  3. Cut the puff pastry into rectangles. Put on the right side a little of the apple filling, put the left half over the filling. Now press the rim with a fork. When wrapping in the puff pastry, your creativity knows no bounds: you can cut the upper pocket side or cut the left and right sides of the puff pastry into strips and alternately lay over the filling in the middle, so there is a kind of cable pattern.
  4. Bake at 175 ° C for about 20 minutes until golden yellow. Enjoy the apple pies warm or let cool and cover with a glaze of powdered sugar and lemon juice.
