Today again a baking recipe from my wife Christel: apple cake with raisins or cranberries.

Ingredients (for a baking sheet)

  • 4 eggs
  • 200 g of butter or margarine
  • 180 g of sugar
  • 1 pck. Bourbon vanilla
  • 1 pinch of salt
  • 200 g of ground almonds
  • 263 g spelled flour
  • 1 pck. Custard (37 g)
  • 1 pck of baking soda
  • 750 - 800 g apples (Jonagold or Boskop)
  • 200 g almond flakes
  • Raisins and / or cranberries to taste
  • Also: grease for the baking sheet or baking paper

preparation

  1. Beat the eggs together with the warm butter, the sugar, the bourbon vanilla and a pinch of salt with the hand mixer until frothy.
  2. Mix the baking powder with the spelled flour and, with the ground almonds and the contents of the packet, add custard to the egg butter mixture and stir well with the hand mixer. (Surprisingly, you're wondering about the weight, but that's exactly 500 grams - you could just take 500 grams of flour, that would not taste so good.)
  3. Spread the resulting mass on a well-greased or baking sheet covered with baking paper.
  4. Cover the dough with the peeled and sliced ​​apples. This must happen very quickly, otherwise the apples will turn brown. This can be prevented by preserving the apples in lemon juice water before filling them.
  5. Bake the cake at 190-200 degrees C (top / bottom heat) on a medium rack for about 25-30 minutes.
  6. 10 minutes before the end of the baking time, sprinkle the cake with the almonds and sprinkle with the raisins and / or cranberries and bake. Not sooner, otherwise they will burn.
