Apricots and vanilla sheet cake

This delicious cake was today for coffee. The cake is very easy to do.
ingredients
- 4 eggs
- 300 g of flour
- 1 larger can of apricots (unfortunately I only got the small one, that's why I only put a few apricots on it)
- 200 g Magarine (room warm)
- 300 g of sugar
- 2 teaspoons of baking soda
- a bit of salt
- 1 pck of vanilla pudding (taken by the famous Dr. O)
- 500 ml of milk
- 2 cups sour cream (400 g)
preparation
- First, preheat the oven to 180 degrees.
- Beat the margarine with 200 g of sugar until creamy with the hand mixer and slowly add the eggs and stir well.
- Now mix the flour with the baking powder and some salt and add to it.
- Drain the apricots, but then collect the juice and then add the juice to the dough, mix everything well again and spread well on a tray lined with baking paper (but you can also grease the plate well, that's what I did) ,
- Put it in the oven with it for about 20 -25 minutes until it is golden brown. Then allow to cool well.
- Meanwhile, mix the custard powder and 100 g sugar and add 6 tbsp milk, then stir well with the whisk.
- Bring remaining milk to boil and remove from heat, then stir in the pudding powder and put it on the stove again for about 2 minutes, adding a little while stirring.
- Now let the pudding cool and stir occasionally. When the pudding is cold, the cups of sour cream are mixed in and the whole is spread on the cake.
- Finally with apricots, finished! Best bake the day before and refrigerate overnight in the fridge.
