Arugula salad with chanterelles, turkey ham and cherry tomatoes

The next heat wave is approaching: In these times, the kitchen is usually cold. Salads in all possible variations are optimal at high temperatures.

Ingredients for one person

  • 40 g of rocket
  • 80 g of chanterelles
  • 50 g smoked turkey breast ham
  • 7 green olives
  • 4 cherry tomatoes
  • 3 small green barbecue peppers
  • 1 tablespoon capers
  • 1 tablespoon chopped chives
  • 1 tsp teriyaki sauce
  • 1 tbsp oil
  • 1 tbsp yoghurt
  • 1 tablespoon vinegar
  • 1/2 teaspoon dried basil, rosemary, galangal (root galangal) and mustard seeds
  • salt and pepper

preparation

Steam the thoroughly chopped chanterelles for about 8 minutes in oil, teriyaki sauce and spices.

Halve the cherry tomatoes, cut the peppers into slices, cut the ham into strips.

Add the rocket, chanterelles, turkey ham, olives, peppers, cherry tomatoes, capers and chives with yoghurt and vinegar and mix all ingredients very well.
