Asparagus tart with ham

Yesterday I tried this asparagus tart variation (from a TV chef) and found it so delicious that I would like to share it.
ingredients
- 500 g green asparagus
- 500 g white asparagus
- a little salt, butter, lemon, sugar
- Chervil (alternatively chives or parsley)
- 250 g curds
- 500 g ricotta
- sth. lemon peel (abrasion)
- 3 eggs
- 2 tablespoons cornstarch
- 1 puff pastry
preparation
- The white asparagus is peeled and cooked with salt, butter, lemon and sugar for 6 minutes, after 3 minutes then the green asparagus is added (so cook for 3 minutes). Then quench with cold water. The asparagus should not be too soft as it is still cooking in the oven.
- Chop, quark, ricotta, lemon, eggs, salt & pepper stir, 2 tablespoons corn starch (does not have to be, but consolidates the whole thing)
- Spread the puff pastry in a mold, it should remain an edge.
- Spread the ricotta mixture in the puff pastry and place the green and white asparagus alternately next to each other.
- Drizzle with a little olive oil - and then into the oven. At 200 ° C the tarte was finished with me after about 30 minutes.
- I also wrapped the white asparagus in cooked ham, which was also delicious.
