Asparagus tart with ham

Yesterday I tried this asparagus tart variation (from a TV chef) and found it so delicious that I would like to share it.

ingredients

  • 500 g green asparagus
  • 500 g white asparagus
  • a little salt, butter, lemon, sugar
  • Chervil (alternatively chives or parsley)
  • 250 g curds
  • 500 g ricotta
  • sth. lemon peel (abrasion)
  • 3 eggs
  • 2 tablespoons cornstarch
  • 1 puff pastry

preparation

  1. The white asparagus is peeled and cooked with salt, butter, lemon and sugar for 6 minutes, after 3 minutes then the green asparagus is added (so cook for 3 minutes). Then quench with cold water. The asparagus should not be too soft as it is still cooking in the oven.
  2. Chop, quark, ricotta, lemon, eggs, salt & pepper stir, 2 tablespoons corn starch (does not have to be, but consolidates the whole thing)
  3. Spread the puff pastry in a mold, it should remain an edge.
  4. Spread the ricotta mixture in the puff pastry and place the green and white asparagus alternately next to each other.
  5. Drizzle with a little olive oil - and then into the oven. At 200 ° C the tarte was finished with me after about 30 minutes.
  6. I also wrapped the white asparagus in cooked ham, which was also delicious.
