Baba Ganoush

A delicious oriental dip of eggplant. Maybe one or the other likes to try it.

Here are the ingredients:

2 eggplants
2 toes of garlic
a little olive oil
a little fresh lemon juice
2-3 tablespoons Tahina paste (sesame paste)
a few leaves of parsley, mint for decoration
a few black olives for decoration


Now for preparation:

Cut eggplant into 2 halves each. Chop the garlic cloves, puree with a little olive oil until it gives an "oil-mix". Cut the aubergine into a lattice and coat with garlic oil (not too much, the garlic should not dominate later).

Put the eggplant in the oven for about 25 minutes until soft. Now take out the aubergine, remove the pulp from the skin (or spoon off the peel). Chop the pulp (if you like it "lumpy", otherwise puree it) and mix it with the sesame paste and the olive oil (who may also like to take the homemade garlic oil).


The whole with a little lemon juice, salt and pepper to taste! Garnish with fresh parsley and / or mint and olives!

A traditional oriental appetizer, also good for dipping! The Tahina paste is available in larger supermarkets, Turkish shops or delis.
