Bake lye rolls

Although there are also lye pastry frozen or to buy at the bakery, but my tip is for all who like to bake and even Laugenbrötchen want to do it yourself.

From the dough you can make bread rolls, pretzels or pretzel sticks. In the photo, only 2 1/2 leftover buns can be seen, so fast they were gone.

Ingredients for the dough

  • 400-420 ml milk lukewarm
  • Mix 1 cube of fresh yeast or equivalent amount of dried yeast (mix with some warm milk and sugar and let stand until activated)
  • 1/2 tsp sugar
  • 600 g of flour (it is possible to replace 200 g by 550 flour, whole wheat flour, or 1050 flour)
  • 2 teaspoons salt

preparation

Mix all ingredients with the hand mixer or food processor until the dough comes off the edge of the bowl and is very elastic. Cover the dough and leave to rise in a warm place for 30 minutes.


From the dough you can make bread rolls, pretzels or pretzel sticks. Since pretzels are larger, take a larger pot and it should be set twice the amount of lye.

Ingredients for the lye

  • 300 ml of water
  • 2 tablespoons of soda

Boil in a saucepan. The shaped dough pieces are individually dipped in the lye for 30-60 seconds with a skimmer. Place on a sheet of baking paper. If you like, sprinkle with some coarse salt, or caraway, is also delicious.

Preheat oven to 200 degrees and bake for 15 minutes until golden yellow on the middle shelf.
