After my favorite baker suddenly said that he had to close his shop for a lunch break on Friday afternoon, I needed a new one. But the problem is that nobody tastes like that. I do not want these dead white flour rolls with tons of chemistry!

So I started to search and found a movie on YouToube: "Brilliant buns bake themselves for 2.5 Ct ..."


The boy took only water, wheat flour, salt and yeast. But how he made them ...! That opened my eyes!

preparation

  1. Approximately 700 ml of water hot water! So good 50 ° C! The fingers can move in, but one thinks of escape!
  2. Approximately 1/4 cubes of fresh yeast. Yes, really so little and immediately stir in the hot water and dissolve with your fingers.
  3. Approximately 1 tablespoon of salt (at least) and immediately into the hot water.
  4. 1 kg of wheat flour; take as a first try the fine 405er or 510er, the wholemeal and grain version you can try out later.
  5. Stir in the flour, gradually, quite meditatively (if you want ;-)). I let my food processor work. But of course you can knead it by hand as well. It should be a nice soft dough lump kneaded together, so if too sticky still flour must if too dry lacks water. It should be kneaded for at least 5 minutes. Here are the first important connections and chains in the dough ...
  6. Then I put the lump in a bowl, cover well from time to time in the refrigerator. (For 12-15 hours ... or even longer) Caution! He usually goes pretty nice!
  7. The next day, the already risen dough comes on a floured surface. Carefully! The dough will now only be careful in all directions pulled apart and then folded, So I hit the top side to the middle, then the bottom over the top and with the sides as well ... imagine, you fold a towel several times ... then cover and keep warm.
  8. After 30 minutes, carefully pull the cleared packet in all directions and fold again and cover ... repeat everything 3-4 times. Then with a dough spatula, cut off pieces of dough and with each piece pull up the corners and form a round ball. Let it settle ... (20-30 minutes) and then preheat the stove with baking tray to 250 ° C.
  9. Remove the tin, put the bread rolls on top, spray (flower syringe) and cut in (scissors). Put it in the oven, spray again and bake for 15-18 minutes ... done!

When you see the times like this, it seems to take a long time. But most of them are actually walking. Pure working time is not much.
