Basil rolling pin

For the filling:

  • 2 - 3 bunch of basil
  • 2 - 3 Knobizehen pressed through
  • 300 g ricotta or cream cheese
  • 250 g quark, lean or 20%
  • 150 g freshly grated Parmesan
  • 3 eggs
  • Salt pepper

preparation

  1. The o. G. Mix the ingredients well and season (season well, because the pasta dough "swallows")
  2. Roll up the pasta dough and cut in half. Spread half of the filling on each piece of dough, leaving a few cm at the back edge.
  3. Roll them together and fold each one into a kitchen towel, not too tight, the roll opens! Tie together with kitchen twine.
  4. Let it soak in hot salted water for about 50 minutes. Remove from the cloth (if possible do not burn your fingers) and cut into slices.

This dish is such a real "family favorite food"! It tastes wonderful, you can eat it, if something is left, great cold or in the microwave warmed up briefly. Was already taken as a Vesper.


I make a delicious tomato sauce, which I always cook myself in the summer. If I have my own tomatoes right now, I'll make fresh "lumpy" tomatoes. If you do not have all that, you can also make a tasty side dish out of lumpy tomatoes from the tin (pizza tomato).
