Basque chicken

I can really recommend the recipe for the Basque chicken, it is delicious and will certainly make a good impression on your loved ones too.
I brought it some time ago from one of our holidays in northern Spain. It is actually made with a chicken as the meat base, but since we are only two people, I have taken a fresh chicken, which is plentiful enough for us. If you take the actual recipe according to a chicken, then the quantities of ingredients should be increased slightly according to the larger meat portion. The amount is a matter of appetite. Ingredients for 2 persons
- 1 fresh chicken a 1200 g
- Salt, celery salt, paprika
- 4 tablespoons olive oil
- 2 small diced onions
- 200 g of fresh tomatoes
- 1 big red pepper
- 100 g mushrooms
- 1 clove of garlic
- 1/4 L dry red wine
- Thyme, marjoram, oregano, cayenne, fresh chopped parsley
- maybe even water for casting
preparation
- Divide the chicken into 4 parts, season with salt, celery salt and paprika and sauté vigorously in hot olive oil and remove from the pan.
- Peel the tomatoes, cut into cubes and add the onion cubes to the grate and let them turn glassy.
- Then add the chopped peppers and the roughly chopped mushrooms to the pan and place the chicken pieces on top.
- Peel the garlic clove, crush, with a little salt, thyme, marjoram and oregano, as well as a pinch of cayenne pepper and mix with a little of the red wine. Add this mixture to the saucepan and stir.
- Now everything should stew for about 30 to 40 minutes over medium heat. From time to pour some red wine and if necessary add some more water.
- When the stew is over, the chicken is sprinkled with fresh chopped parsley and served.
We only ate fresh onion baguette because every other side dish would have been too much. The already mentioned dessert - whose recipe I have also set - rounded off this delicious Hähnhenzubereitung excellent.
