Beef roulades filled with apple and paprika

Roast beef with a difference: filled with onion, apple and red pepper in beetroot sauce with mashed potatoes.

For 4 people

  • 4 beef roulades
  • Salt pepper
  • mustard
  • Bacon or striped bacon
  • 1 onion
  • 1 apple variety Braeburn
  • 1 red pepper
  • Sunflower oil
  • beef broth
  • beetroot juice
  • smoked paprika powder or
  • 1 bag Knorrfix for roulades spice mixture

preparation

  1. Salt meat and pepper from one side, turn it over, sprinkle with medium hot mustard, put a slice of bacon on top.
  2. Place the filling in the middle. Peel an apple, quarter and cut thin slices. Halve red pepper, clean, cut into 1 cm wide pins and slice 1 onion. Filling per roulade: 1 slice of onion, 2 slices of apple, 3 pints of paprika.
  3. Roll in rolls, roll up and fix. I'll take a roulade clamp or metal skewered needles.
  4. In the pressure cooker, let a little oil heat up, roast the roulades briefly, deglaze with 200 ml of beef broth and 150 ml of red beta-juice. Add some mustard with seasoning with smoked paprika powder. Or: To extinguish, mix 1 bag of spice mixture for roulades in 300 ml of warm water and 150 ml of red beta-juice.
  5. Cut the rest of the apple, onion and pepper into small pieces and add to the pot for cooking. Close lid on stage 2, cook for 40 minutes or stew in pot for 90 minutes.
  6. Remove the roulades from the pot after cooking and puree the sauce with a blender, and if necessary thicken.

Serve with mashed potatoes. You can also color the puree with some beetroot juice. Good Appetite.

20 minutes preparation time and 40 minutes cooking time in the pressure cooker = 1 hour or 20 minutes preparation time and 90 minutes in the pot = 1 hour and 40 minutes.
