Beef tongue in Madeira sauce

First, we take only fresh tongue and no cured! The cured do not taste in this preparation. We order the tongue directly from the butcher.

The tongue is boiled at least 1 1/2 hours the day before. Together with carrots and leek. When still hot, then the skin must be removed. Anyone who knows the skin of a cooked chicken knows how the tongue feels. So nothing is bad.


The next day, the tongue is coldly sliced. Then you make from bacon cubes (no smoked, but fat bacon) a roux. It should be light brown if you now stir the broth (which of course has been kept) into it to prepare the sauce. Bring to a boil, but do not forget the stir.

Now you need a blender, because there are still carrot pieces and diced bacon in the sauce. Briefly sip everything until a fine creamy sauce has formed. If you do not have a blender, take "Flechtte Lotte". Now take the pot from the stove, because now comes the important thing.

  • about 3 tablespoons tomato paste
  • about 3 TL Madeira
  • about 2-3 TL sherry
  • about 2-3 teaspoons of sugar
  • 50 g butter

  1. Add these ingredients to the sauce and season to taste. Possibly. the individual ingredients increase, but the quantities that I have stated are always right with us.
  2. Now comes the hardest thing: Stay away from the sauce because it's so delicious ...
  3. Take a large microwave dish and add the still cold meat and pour it all over with the sauce.
  4. Now heat in the microwave until the meat is hot. We also have homemade mashed potatoes and fine peas in butter.

Well, now comes the hardest. I'll describe it that way. You know your own tongue. The beef tongue is much stronger in consistency. So nothing bad or something. The meat is but buttery, the knife just slides through. It is by no means dry. The taste is somewhere between roast beef and veal. I can not describe it otherwise, except with DELICIOUS!
