Berlin pancakes

ingredients
(for twenty Berliners)
- 500g flour
- 200 g jam for filling
- 125 ml of milk
- 100 g of butter
- 30 g yeast (cube)
- 2 eggs
- 2 tbsp sugar
- 1 egg yolk
- 1 pck of vanilla sugar
- 1 teaspoon lemon peel (grated)
- Powdered sugar for rolling, alternatively frosting
- Frying fat
preparation
Dissolve yeast in lukewarm milk. Add a little flour and let stand for a quarter of an hour. Add the remaining ingredients and knead a smooth dough. The result should be a soft but not sticky dough.
Knead for ten minutes and then rest for half an hour under a cloth.
The filling can be done either before or after frying.
Fill before frying: Roll out the dough about half a centimeter thick and cut out circles (six to seven centimeters in diameter). Put some jam on a dough circle. Put some water or egg whites on the edge and press a second circle on top.
After frying fill: Roll out the dough about the thickness of a finger and also cut out circles. The jam coated with a sieve is then injected after frying with a pastry bag.
Before frying, let it rest under a cloth for half an hour. Then bake in hot fat until golden brown. Turn once.
After frying, allow to cool and decorate with powdered sugar or frosting. Tätää-Tätää-Tätää-Ready!
