Berliner Kartoffelsuppe

A potato soup that is hard to beat! (Recipe for 4 people)

Take for the Berlin potato soup:


ingredients

  • 1 large bunch of fresh greens (or assemble with 3 - 4 carrots, 1 leek, 1 larger piece of celery, parsley)
  • 2 to 3 pounds of potatoes (mostly hard-boiled)
  • 150 - 200 g of streaky bacon (already available at the discounter)
  • 2 - 3 pairs of Viennese or 3 thick sausages or 1 meat sausage,
  • 1 medium onion,
  • 2 tsp mustard,
  • 3 good splashes Maggi, (indispensable),
  • Salt pepper,
  • 1 teaspoon vegetable broth

preparation

Peel the potatoes, clean the vegetables, rinse them, cut everything into small cubes and place in the saucepan. Fill with water (potatoes should not be completely covered). Add the vegetable stock, bring to the boil and simmer for about 15 minutes on a small scale. In the meantime slice the sausage or sausage, chop the onion. Fry the bacon with a little margarine in the pan, add the sausages and onions. Brown everything a little bit.

When the potatoes and vegetables are cooked, a few times with the hand blender briefly in the soup hold (not puree, it should still be a few pieces of potatoes and vegetables are preserved). Then season with the mustard, maggi, pepper and maybe a pinch of salt, add fried bacon and sausages, bring everything to a boil again, done.

If you do not like bacon or can not tolerate it, you should fry it separately and add it to it. As a flavor carrier, however, it is actually indispensable for the potato soup as well as Maggi.

I personally no longer tolerate fried bacon and sort it out (my husband is happy he has more of it). Worth trying out, once a month Potato soup is a must in our family.
