Biscuit WITHOUT annoying eggs separate and beat snow

I've been making biscuit for 20 years after the same recipe and I've never failed.

ingredients

  • 4 tablespoons hot water
  • 4 eggs
  • 120g sugar
  • 160g of flour
  • some baking soda (half pack is enough)

preparation

  1. However, I always take the 1 1/2 times the mass (in general, if the cake is to cut through).
  2. Stir water, eggs and sugar into a thick foam (and I'll do it for 15 minutes). The longer you mix, the more bubbles are thrown into the dough and then it goes up nicely.
  3. Then carefully fold in the flour, including baking powder - with a spoon or dough card.
  4. To avoid making the dough in the middle of a hill, I squeeze a light trough in the middle with a wet spoon before baking after filling the dough into the mold. So about fist-size. Then the dough gets nice and flat.
  5. Bake in preheated tube at approx. 170 degrees.
  6. If the dough is already too dark, but not yet, just cover with aluminum foil, but of course do not leave the oven open too long, otherwise it collapses immediately.
