Biscuit WITHOUT annoying eggs separate and beat snow
I've been making biscuit for 20 years after the same recipe and I've never failed.
ingredients
- 4 tablespoons hot water
- 4 eggs
- 120g sugar
- 160g of flour
- some baking soda (half pack is enough)
preparation
- However, I always take the 1 1/2 times the mass (in general, if the cake is to cut through).
- Stir water, eggs and sugar into a thick foam (and I'll do it for 15 minutes). The longer you mix, the more bubbles are thrown into the dough and then it goes up nicely.
- Then carefully fold in the flour, including baking powder - with a spoon or dough card.
- To avoid making the dough in the middle of a hill, I squeeze a light trough in the middle with a wet spoon before baking after filling the dough into the mold. So about fist-size. Then the dough gets nice and flat.
- Bake in preheated tube at approx. 170 degrees.
- If the dough is already too dark, but not yet, just cover with aluminum foil, but of course do not leave the oven open too long, otherwise it collapses immediately.
