Blanch broccoli properly

If you like broccoli for example it is recommended to blanch it for only 2 to 3 minutes, that is, it is dipped in bubbly boiling salted water.

Then poured in a sieve (I have a sink-sieve, because I do not have to handle pot and sieve at the same time) and frigate ice-cold, I usually put in the morning 1 liter of water in the measuring cup in the refrigerator.

Quenching stops the cooking process and the broccoli retains its beautiful green color. Another advantage is that the additional cooking time is reduced to 1 - 2 minutes.
