Bogca - filled Turkish rolls

Recipe for Bogca - filled Turkish rolls.

ingredients

  • 500g flour
  • 1 cube of yeast
  • 100 ml of water
  • 100 ml of milk
  • 100 ml of oil
  • 3 teaspoons salt
  • 1 tablespoon of sugar
  • 2 eggs (he) separated
  • Sesame, black cumin

preparation

  1. Dissolve the yeast in water, pour into a bowl and mix with milk, oil, sugar, salt and 2 egg whites.
  2. Slowly knead the flour. Add flour until a smooth and soft dough is formed. Let it go for 1 hour.
  3. Take large pieces from the dough and press flat, fill with mincemeat (see below) or cheese, form into bread rolls.
  4. Whisk egg yolks and spread on the bread rolls.
  5. Sprinkle with sesame and black cumin.
  6. Bake in a preheated oven at 200 degrees until golden brown.

mince

  • 250 g beef minced
  • 1 onion 2 green pointed peppers
  • 1 tablespoon tomato paste
  • 2 tablespoons oil
  • Salt, pepper chilli
  • fresh parsley

Peel the onion with chopped peppers, chop the parsley.

Heat oil in a pan over medium heat, lightly fry the onion pieces and peppers in yellow.

Add minced meat, fry well for 7-8 minutes, stirring constantly. Add the tomato puree, fresh parsley, salt, pepper and chilli flakes, stir and remove from the heat, allow to cool.
