Bohemian plum dumplings made from quark dough

ingredients
- 60 g butter
- 2 egg yolks
- pinch of salt
- 1 abraded stale roll
- some Milk
- 300 g quark
- 300 to 350 g of flour
- about 750 g plums
To sprinkle:
- 100 g breadcrumbs
- 50 g butter
- sugar and cinnamon
preparation
- Beat the butter and the egg yolks until frothy, add the milk-squeezed and squeezed breadcrumbs, the cottage cheese and the flour, and make everything on a pastry board into a smooth dough.
- Cut the dough rolled out to about 1/2 cm into about 40 even squares.
- The washed and dried on a cloth plums (they are too sour, the kernels are replaced by a piece of sugar) wrap in the dough pieces and form into a well-closed dumplings.
- Cook in boiling salted water and simmer slowly for 10 to 15 minutes, loosening lightly from the bottom of the pot with a wooden spoon.
- Then remove with a slotted spoon and drain, arrange in a bowl and serve to taste with roasted bread crumbs, melted butter, sugar and cinnamon.
