Braised beef roulades

Here is my favorite recipe for mega-delicious roulades.

ingredients for 4 persons

  • 100g fat bacon
  • 1 onion
  • 2 gherkins (about 100g)
  • 4 beef roulades (à 150g)
  • 2 tsp mustard
  • salt
  • black pepper
  • Sunflower oil
  • 0.5l clear broth or broth
  • 1 cup crème fraîche
  • Red wine, dry or semi-dry
  • cranberries

preparation

  • Cut the bacon, onion and cucumber into thin strips (if you bring the bacon fresh from the fridge, it is very firm and can be cut very well)
  • Dab roulades dry and flatten with the palm of your hand
  • Sprinkle roulades thinly with mustard and sprinkle with salt and pepper
  • Spread the bacon, onion and cucumber strips on the roulades and roll up the roulades from the narrow side ... while cutting in the long sides, so that the filling can not escape when stewing
  • Fix roulades - either with roulade needles or toothpicks or kitchen yarn - and season again with salt and pepper from the outside
  • Prepare broth and prepare
  • Heat up the oil in a casserole or deep pan with a lid (big enough to fit all the rolls next to each other)
  • Roulade in the oil, sauté briefly and vigorously from all sides to form a brown crust
  • Deglaze with a generous dash of red wine and then add the broth
  • Loosen the frying pan with a wooden spoon and mix in slightly
  • Now cover on the pot and the roulades for 90 minutes on low heat to stew

ATTENTION: The liquid should not simmer strongly, but just simmer gently ... otherwise the meat will dry

  • Remove the roulades after 90 minutes, remove the fixation and keep the meat warm
  • Bring stew to a boil and stir in crème fraîche with a whisk
  • Refine the sauce with cranberries and cook over medium heat until it has the desired binding

Side dishes

We always have:

  • Boiled potatoes or potato dumplings
  • Peas and carrots
  • Red cabbage
  • applesauce
