Breaded mushrooms with basil quark

200g giant mushrooms
150g chopped almonds
Flour for turning the mushrooms
1 egg
50g butter lard
1 bunch of basil
150g whole milk yoghurt
150g quark
Salt pepper
1 teaspoon lemon juice
1 pinch of sugar

Clean mushrooms, cut into slices, salt and pepper from both sides. Turn in flour and pull through the whisked egg. Turn in the almonds and press down.

Brown hot brown butter from both sides in hot clarified butter, drain on kitchen paper.

Meanwhile, grate the basil finely and mix with the yoghurt and quark. Season with salt, pepper, the lemon juice and a pinch of sugar.

Arrange mushrooms with the quark - garnish with a few small basil leaves.
