Brioche striezel

Grandma's brioche striezel

ingredients

  • 500g flour
  • 1 egg
  • 60 g of sugar
  • 60 g soft butter (I always take Sanella)
  • 250 ml of milk
  • 1 cube of yeast
  • To coat: Whisk 1 egg yolk and a little milk

preparation

  1. Mix flour, sugar and 1 egg together, dissolve the yeast in the lukewarm milk and add to the flour.
  2. Knead the whole thing for 10 minutes (important!), Preferably with the dough hook of the mixer, who has no food processor. (Or for the athletic by hand)
  3. Then the butter in small pieces or lukewarm liquid, add to the dough and knead for another 10 minutes (important!).
  4. Now - who likes - raisins or chocolate pieces to do so. (My kids like him without raisins etc. just with butter and jam mhhhhh ...
  5. Cover the dough with a damp cloth and let it rest for about 30 minutes.
  6. Then form the striezel, let it rise for about 20 minutes and brush with the egg mixture before baking.
  7. Bake at approx. 180 degrees top / bottom heat for approx. 25 minutes - done!
  8. The striezel is very large, loose, delicious and very fine-fiber.
