For some time I "tinker" with a good recipe for a really delicious crumb cake, because my "better half is a big fan of crumble cake." After several failed attempts, I finally succeeded, a really loose, airy butter crumb cake, with wonderfully crispy Sprinkle on the coffee table to bring.

For the dough

  • 140 g soft butter
  • 120 g of sugar
  • 1 pck of vanilla sugar
  • 3 eggs
  • 250 g flour
  • 1 pck of baking soda
  • 100 g of sour cream

For the crumble

  • 300 g of flour
  • 175 g soft butter
  • 150 g of sugar
  • 1 tbsp oil

preparation

The preparation is very simple and works fast too:

  1. For the dough base, stir the soft butter with the sugar, vanilla sugar and the eggs with a hand mixer until frothy, then the flour is mixed with the baking powder, added in portions and stirred well.
  2. Finally, stir in the sour cream and place the dough on a greased or baking paper tray.
  3. Then only the ingredients for the sprinkles have to be mixed well (I usually take a larger fork, works better than with the dough hook!). From the mass then the crumbles are formed and distributed on the dough.
  4. Then off in the preheated to 200 ° C oven (top / bottom heat - no air circulation!), After 25 to 30 minutes, the cake is ready, which can be dusted after cooling with powdered sugar.

However, we did not endure it that long because the whole house smelled as delicious as the bakery!
