Cabbage stew with noodles

ingredients

For 4 people:

  • 100 g of bacon
  • 50 g onions
  • 1 bunch of spring onions
  • 300 g of carrots
  • 100 g of celery
  • 500 g of pointed cabbage
  • 250 g of tomatoes
  • 2 tablespoons olive oil
  • 1 clove of garlic
  • 1 L vegetable stock
  • 150 g of frozen peas
  • 300 g filled tortelloni (finished product)
  • 1 tray of cress

Preparation:

  • Finely chop the bacon, remove the onions and chop.
  • Clean the cabbage, remove the stalk and the leaf ribs and cut into pieces.
  • Clean carrots and celery, then slice.
  • Wash the spring onions and cut into rings.
  • Boil tomatoes with boiling water, skin, quarter, core, then cut in half.
  • Heat oil in a pot. Fry bacon and onions in it.
  • Add the prepared vegetables and the uncooked clove of garlic, allow to fry for about 4 minutes.
  • Add the stock and cook the stew for about 20 minutes.
  • Then add peas, tomatoes and tortelloni, cook for another 5 min.
  • Finally, sprinkle the finished stew with cress and serve immediately.
