Perfect for hot days: The cake with melons does a little work and also needs its rest time, but the finished product is worth the effort.

A piece of cake for coffee always tastes good. But now, with the current heat, this love habit is often too much for us.


But I have a recipe for a delicious cake, which tastes good even in the warm temperatures and of which everyone likes to like a piece of coffee.

ingredients

For a 24-format springform or a square shape the size of half a baking tray

For the ground


  • 200 g spoon biscuits
  • 100 g soft butter

For the crowd

  • 1 pck lemon starter
  • 100 g cream cheese
  • 2 cups of cream
  • 1 pck of vanilla sugar
  • 75 g of sugar
  • 1 tablespoon of sugar
  • 2 tablespoons of lemon juice
  • 200 ml of water

For covering

  • 1/2 low-kernel mini watermelon
  • 1/2 honeydew melon

preparation

  1. First the spooned biscuits are put into a plastic bag and minced with a rolling pin. These fine crumbs are then mixed well and evenly with the soft butter. The edge of a springform pan or the square cake pan is placed on a cake plate and the butter crumbs are now spread evenly on the ground and pressed tight.
  2. The bag jelly powder is stirred with the water and should swell for about 10 minutes.
  3. In the meantime, the cream cheese is stirred smoothly with the 75 g sugar, the vanilla sugar and the lemon juice. The remaining sugar is stirred in the jelly, this is heated (not boil!), Removed from the heat and then allowed to cool.
  4. Now the cream can be struck stiff. When the jelly begins to gel, add it to the cream cheese, and at the end, whip in the cream evenly. This finished mass is now distributed on the crumb floor, smoothed and must now be cold for at least 3 hours. A longer cooling time does not harm the cake.
  5. Now the melon halves are shaped with a melon cutter to make the balls as sizeable as possible, and these can then be decorated as soon as the surface of the cake has become firm. The above-mentioned cooling time should be maintained in any case, so that the inside of the cake is pleasantly firm.
  6. So that the cake tastes as refreshing as it looks, I recommend to place the pieces directly from the cooling on the dessert plates and to serve for coffee.

When cooled, the melon cake is a refreshing treat for the midsummer heat.
