Canning made easy? in the oven!

Canning, awakening, canning? a wonderful way to preserve food. Anyone who considers this old-fashioned to be right and wrong at the same time. Although Johann Weck invented cooking for over 100 years, on the other hand, it is as current as ever. Because not only can fruit be awakened, but also some vegetables, ready meals and even baked goods! The advantage: The waking is immediately available and does not have to be thawed like frozen food first. Ideal for fast separators and spontaneous cookers!

The tool: the oven

In the past, there was a large single-purpose pot for the stove in almost every household, and later the automatic alarm, which has its own power connection. If you shy away from this investment or just want to try cooking, then there's the oven! In the end, cooking is nothing more than heating food in a water bath for a certain amount of time and sealing it airtight when it cools down. And that works just as well in the oven as in the special pot.

The glasses

Ideal are actually the classic mason jars with separate lid, rubber ring and brackets. They are heat-resistant, you notice immediately when the awakening failed or the food is no longer good, they are easy to clean and they are available in various shapes and sizes. Mason jars with clip closure and rubber seal are also good. Limited you can also use screw jars or glasses with twist-off lid, then the lid may have no damage. Above all, the glass has to endure great heat!

With the rubber rings one must make sure that they are still elastic and not brittle.

First duty: hygiene

Who wants to make something durable, should from the beginning to make sure to work as sterile as possible. The glasses must be CLEAN: rinsed very hot, rinsed with hot, clear water and placed headfirst on a fresh and clean dishcloth. Once the glass has been attacked by mold, hot water is not enough. Then you should boil the glass for several minutes.

When filling, make sure that the edge is not dirty, then the rubber ring can not rest properly and air can penetrate. Also do not make the jar too full, up to 2cm under the rim. If there is liquid in the glass, it may rise high during cooking (!) And may soil the rim. For baked goods such as cake in the glass maximally half full, because the dough still rises.

The cooking in the oven

Lay out the juice pan with a tea towel? Even in the oven, the glasses should not have direct contact with the floor. Put glasses on top and add about 2 cm of water. Another tip: The water should always have a similar temperature as the glass content? So if I want to boil hot soup, I take hot water, cold fruit with cold fruit. Put the frying pan with glasses in the cold oven and set it at 175 ° C. Now you have to watch a little: As soon as bubbles rise in the glass, the cooking time begins. As a guideline: For fruits you can switch off the oven and leave the glasses for another 30 minutes, which is enough.

After the cooking time, remove the glasses from the oven and place them on a dry dishcloth.

Only when they have cooled completely, you can remove the clamps from the jars and make the airtight sample: To do this, lift each glass without a clip on the lid. If it stops, the glass is tight.

What can you cook in?

The temperature when cooking in a water bath, ie in the oven or in the normal Einkochautomat, logically reaches a maximum of 100 ° C. Some bacteria and spores can not be killed with it. However, acid helps to protect these foods from harmful germs. Foods with a naturally high acid content such as fruits can therefore be awakened in the oven without hesitation. Processed foods usually too. For vegetables, our great-grandma has already known the vinegar trick: that is why most vegetables, such as cucumbers, beans, pumpkins, are canned sour. For meat and fish, other methods of preserving were formerly chosen: salting, drying, smoking, preserving in fat. However, if you have a Einkochautomat that boils under pressure (pressure canning), which reaches temperatures up to 120 ° C, which allows easy storage. By the way, industry is always boiling under pressure. Buy now Weck 12 pieces Tumbler Mason Jar Mason jar incl. Rubber rings and Weckklammern Weck 12 pieces Tumbler Mason Jar Mason jar incl.
