Caramelised new carrots - a delicious vegetable dish

This vegetable dish is more than just a side dish! It can be served as a starter or as a main dish, perhaps with a steamed fish fillet.
ingredients
- 1 kg of new carrots, scraped, please leave a little green, put aside a few green leaves to decorate the finished dish
- Cumin powder, salt, pepper, 1 teaspoon of caraway seeds
- 2 tablespoons honey, 1 cup broth, juice of half a lemon
- 100 g of butter
- 5 garlic cloves, leave completely

- The pot should be so big that the carrots can lie comfortably.
- Let the butter melt in the pot, it should not turn brown. So watch out, that's very fast. Best, do not let the plate get too hot.
- Now the cloves of garlic come in, the carrots, the spices. Mix honey, broth and lemon, pour on the vegetables and simmer on low heat for 10 minutes with the lid closed.
- Then carefully remove the carrots, place on a plate and keep warm with a piece of aluminum foil over it. Now turn up the heat and boil the vegetable broth into a kind of syrup.
- This is also very fast, it is best to stop and watch, so that nothing burns or gets too dark. The garlic cloves can be left in the dish or taken out to taste.
- Add this sauce over the carrots, decorate with a bit of chopped green carrots.
As I said, this fish fillet or a fried chicken breast, maybe a veggie burger, that tastes very delicious.
