Carbonara sauce alla mom Lina

Here is a carbonara sauce recipe that gave me then my host mother from Italy "Mamma Lina".

You need the following ingredients:

  • salt and pepper
  • Whipped cream as needed
  • 1 egg per serving
  • diced cooked ham
  • fresh parsley
  • butter
  • and of course pasta, preferably spaghetti

That's how it works:

While the noodles are cooking, you dissolve a small piece of butter, about 30 g, in a pan and roll about a handful of cooked ham. (At the butcher / butcher, I always have a slightly thicker slice - about 5mm thick - cut off.)

Added to this is about 200 ml of whipped cream and salt and pepper. Stir and stir until creamy. Just before the noodles are ready, I'll give an egg to the pan and continue to stir. I then pour the noodles and give them to the pan for a short time. Then just serve and decorate with some fresh parsley.


With this amount of sauce I usually get 2 plates full of spaghetti with carbonara sauce, one for my two kids.

How much cream you use depends on the taste. (Alternatively, you can dilute the cream with water or milk in the ratio of 150 ml of cream and 50 ml of water or milk, but we like that less.)

Our kids taste it delicious.
