carrot jam

Here is the ingenuity of the cook asked. The main thing is that the carrots have 2/3 of the total weight.

For 1 kg of fruit I take:
600 - 700g carrots
400 - 300g sour apples
2 organic lemons (juice and grated peel)
50g very finely cut ginger
500g jam sugar 2: 1

If you do not like ginger, just leave it out. You can refine with a dash of Calvados.


Instead of apples, others do not go well with sweet fruits.

However, the carrots must be pre-cooked for 5 minutes before the other ingredients are added. Then cook like any other jam.
