Carthusian dumplings with vanilla sauce

Palatinate Karthaus Dumplings are a frugal dish that tastes especially good to children. With a classic custard they are especially delicious.

Ingredients (4 people):

For the dumplings:


  • 6 milk rolls from the previous day
  • 2 eggs
  • 1/2 l of milk
  • 1 tablespoon of sugar
  • 1 teaspoon of cinnamon
  • 1 packet of vanilla sugar
  • Oil for baking

Custard:

  • 4-5 egg yolks (alternatively 1 egg yolk and 1 tablespoon cornstarch)
  • 100 g of sugar
  • 1 vanilla pod (or 1 pck vanilla sugar)
  • 0.5 liters of milk

The milk rolls from the day before are cut into small pieces and placed in a mixing bowl. In a separate bowl beat the eggs with the milk and the vanilla sugar until frothy. Pour the liquid over the small cut bread rolls and let it simmer for about 40 minutes until the bread rolls are well soaked. In the meantime mix a tablespoon of sugar with a teaspoon of cinnamon and place on a deep plate. After 40 minutes, square dumplings are formed from the dough and sautéed in the pan from all sides. Turn the warm dumpling into cinnamon and sugar from all sides. The dumpling can be reheated in the oven after cooling at 150 degrees for ten minutes.

There is a classic vanilla sauce. First cook the milk with the vanilla pod. Whisk egg yolk and sugar with a blender. The vanilla pod will be taken out of the milk, cut open with a knife on the side and scratch out the vanilla pulp. Give the mark again to the milk. Slowly mix the vanilla milk with the egg whisk with the sugar using a whisk. Heat the whole again with stirring until the mass thickens. If you do not want to use so many eggs, you can also replace five eggs with a tablespoon of starch for the sauce. The vanilla pod can also be replaced by a packet of vanilla sugar.
