Cauliflower soup - cheese and turmeric variant

The cheese turmeric variant of our cauliflower soup.
ingredients
- 1 cauliflower
- 1 big onion
- 1 tbsp olive oil
- 1 tbsp turmeric
- 1 tsp curry
- 1 to 1.5 L broth, depending on the size of the cauliflower (eg Knorr vegetable broth)
- 1 cup (200 ml) sweet cream
- 3 corners (about 100 g) Camembert (eg Se Chavegrand by Lidl, 45%)
- some fresh grated nutmeg
- freshly ground pepper (eg red + black)
- salt
preparation
- The cauliflower is washed, cleaned and divided into good sized leaves in roughly equal parts.
- In a soup pot, the diced onion is lightly browned together with turmeric and some curry.
- This is quenched with broth. Then the shredded cauliflower comes in.
- The cauliflower is cooked in 20 minutes (and not poured off).
- All remaining ingredients, cream, sliced Camembert and spices are added quickly.
- With the hand blender you mashed cauliflower, melted cheese strips etc. The whole thing resembles a cream.
- This consistency can be adjusted well by adding boiling water.
- Maybe there must be a pinch of salt?
