Cheesecake with rum-apple carving

What a great cheese cake, I thought, when I found the recipe in my mom's collection! There are really cheesecake recipes more than there are days a year, but I did not know that yet. What was closer than simply baking? I have to say, it was absolutely worth it. The cake is so juicy and aromatic, just just delicious.

Bake it and you'll agree with me that the work was definitely worth it. Let him taste you! With a good cup of coffee you can hardly do anything better.

Ingredients for a 26er Springform

  • 1 kg of quark
  • 3 eggs
  • 250 g of sugar
  • 100 g of butter (add a little extra for greasing the shape)
  • 1 tbsp vanilla extract
  • 1/2 pck of baking powder
  • Abrasion of half a lemon
  • 1 pinch of salt
  • 500 g sweet and sour apples (I had Braeburn)
  • 1 serving bottle of rum (4 or 5 cl)
  • 125 g raisins
  • 3 tablespoons cornstarch
  • 40 g semolina

preparation

  1. The eggs are separated, the egg yolks are then whipped with 180 g of the sugar with the hand mixer to a very frothy mass. The egg whites are whipped to very stiff snow with the addition of one tbsp of remaining sugar. Both bowls are set aside for a moment.
  2. Now the butter, the vanilla extract, baking powder, a pinch of salt and the grated lemon peel come to the egg yolk mass and everything is mixed together again well. Now also the quark is underlined thoroughly.
  3. The apples are washed, peeled, quartered and the core is removed. The apple quarters are mixed with a little lemon juice, which prevents browning of the pieces of fruit. These are now cut into thin slices and await further processing.
  4. The oven is preheated to 180 degrees air circulation.
  5. The remaining sugar is then slightly melted in a pan over medium heat, the apple pieces come in and are caramelized while panning the pan. A little rum from the portion bottle is poured into the pan, the remaining rum is now lit in a warmed, metal ladle and the apples are flambéed with the burning rum. Please make sure that there are no flammable objects in the vicinity of the stove, nobody should be hurt by the Flambier action.
  6. The apple slices are now poured into a bowl for short cooling.
  7. Now the quark mixture is mixed with the raisins, the cornflour and the semolina, and the whisked egg whites are gently but thoroughly stirred into the mixture. Now everything comes into the greased baking dish, is smoothed and the apple pieces are distributed on the cheesemasse.
  8. The cake is put into the oven and allowed to bake in 50 minutes.

After the end of the baking time, the cake comes out of the oven and should cool completely in the mold. If you like, you can sift some powdered sugar over the apples. Now it can finally be cut and eaten for coffee time.
