Chicken breast with chopped tomatoes

Poultry and fully ripe, chopped tomatoes, it always works. And for the lighter taste of chicken breasts, the strong tomatoes, prepared as a fresh, well-seasoned sauce, are great. Together with the rice results in a light, yet satisfying meal, right now, in the warm summer weather.
In any case, it is worthwhile to do cooking, it is not too much work and is just delicious. Anyway, I wish you good appetite already!
ingredients
For 2 people:
- 2 not too small chicken breast fillets
- 1 can of tomatoes (400 g)
- 2 tablespoons tomato paste
- 1 medium onion
- 1 medium garlic clove
- Oregano (fresh or dried)
- 2 - 3 stems of fresh basil
- Pepper, salt or herbal salt
- Butter lard for frying
- 120 g brown rice (uncooked weighed)
- 1 handful of frozen peas
preparation
- Heat some clarified butter in a pot and fry the finely chopped onion and the chopped garlic in a glass.
- Then the tomato paste is added and is also slightly fried with the onion and garlic.
- Now the can of chopped tomatoes is added and also oregano and the small cut leaves of 2 stems of basil are added and salt and generous pepper are added. The tomatoes should now simmer on low heat for about 15 - 20 minutes.
- Put the rice with two and a half times the amount of water and bring to a boil. Salt and cook more slowly on a small scale than let it boil. The rice is cooked when the added water is almost "absorbed".
- The chicken breast fillets are seasoned with pepper and herbal salt and fried in a pan in hot clarified butter.
- The tomato sauce is now again tasted strong and the rice is freed from the residual water and mixed with a piece of butter and the now thawed peas and briefly heated again.
- Now appetizing can be prepared and some leaves of the remaining basil stick decorate the finished plates for decoration.
