Chicken potato casserole with mushrooms

As we are currently in the mushroom season, yesterday I just could not resist our local mushrooms. I immediately bought some fresh, brown mushrooms to prepare this super tasty dish. It does not necessarily have mushrooms. You are also welcome to use other mushrooms!

Ingredients for 3 servings:

  • 5 large chicken thighs (nature)
  • 6 medium potatoes
  • 2 red onions
  • 4 cloves of garlic
  • 400 g mushrooms
  • 2 tablespoons flour
  • 50 g butter
  • 1 pinch of nutmeg
  • Salt pepper

1) I started with the chicken thighs. I washed the chicken thighs, peeled off the skin and cut away the fat from the sides. The fat and the skin I put on an extra plate aside. Then I broke the meat off the bones and cut it into bite-sized pieces. I also put the sliced ​​pieces of meat on another plate and set aside:

I put the bones in a pot to make a chicken stock. In the pot I have also added an onion and two garlic cloves (both already peeled). Everything was covered in cold water and boiled. After that I reduced the heat and cooked the boullion over medium heat for one hour. For a clear broth you can now and then scoop the foam with a spoon! I poured the finished bouillon through a sieve. That's the result:

2) When the bouillon simmered on the stove, I prepared the potatoes. At first I peeled and halved them. Then I cooked them in salted water. You should not cook the potatoes properly, but cook only half. Since I have been eating potatoes, I cooked them for about 15 minutes. Then the potatoes were cooled. After cooling, I cut them into 1-cm slices.

3) In the next step, I have fried the chicken skin in its own fat until all the fat in the pan has melted. Then I took out the skin and put in the pieces of meat. After cooking the meat for a few minutes, I added chopped onions and garlic cloves. I fried it together with the meat for another 2 minutes. Next I washed the mushrooms, halved and added to the pan. The whole thing gave off a lot of fluid. That's why you should wait until all the liquid comes out. After the liquid spilled, I added flour and mixed everything. Finally, the broth was added. After adding the broth and all the fried ingredients, the sauce was made in the pan. Add so much broth until the sauce covers the meat. The sauce should not completely cover it:

Finally, a pinch of nutmeg, salt and pepper were added according to taste.

5) I preheated the oven to 200 degrees. Then I inserted the baking pan and let it bake for 40 minutes.
