Chicory and orange salad with red onions

Salad with a difference: This is a very delicious and quickly prepared recipe for a healthy and vitamin-rich chicory salad with oranges and red onions.
Ingredients for 2-3 persons
- 2 chicory
- 1-2 oranges
- 1/2 -1 red onion (to taste)
- salt and pepper
marinade
- 2 tbsp sugar
- 2 tablespoons of red wine vinegar
- Juice of 1 orange and possibly a little rubbed peel
- 5 tbsp olive or avocado oil
- or if you do not want to make the marinade yourself, a fruit vinegar syrup - preferably orange. But it is also at will a different flavor very well. I used blood orange balsamic
preparation
- Cut the chicory into thin strips, wash and drain.
- Peel or halve orange and cut into thin slices (juice that does not spill away).
- Peel red onion, halve and cut into very fine strips.
- Arrange chicory on a plate / plate. Overlay the orange slices and then the onion slices.
- Add the collected orange juice and season with salt and pepper.
Now you have 2 options: Either you make the "marinade" yourself, or you reach like me, to a finished fruit vinegar syrup.
Prepare marinade
- Either caramelise 3 tablespoons of sugar in a pan / saucepan. Add the squeezed orange juice, optionally some orange peel, and red wine vinegar and stir. Beat the oil with a whisk and simmer for a few minutes, season with salt and pepper from the mill.
- Or Heat a few tablespoons of fruit and vinegar syrup, together with about 3 tablespoons of olive or avocado oil.
Then spread the warm marinade over the salad and leave for at least 30 minutes. Then enjoy!
