Chocolate Caramel Cookie

Time

Chocolate caramel cookies about 60 finished pieces.

Ingredients for the dough:

  • 300 g butter (cold) in pieces
  • 250 g powdered sugar
  • 120 g of ground almonds
  • 240 g of flour
  • 2 eggs
  • 2 pinches of salt
  • 40 g of cocoa

preparation

  1. Knead the butter, salt, powdered sugar and almonds, if possible in the food processor, until smooth.
  2. Add the eggs and work up.
  3. Then add the flour and cocoa and work everything smoothly to a smooth dough.
  4. The dough is put in the refrigerator overnight.

Further processing the next day:

  1. The dough on a floured cake board or similar roll out thinly. If the dough sticks, also put some flour on the surface of the dough.
  2. Cut out the cookies and place on a baking sheet lined with baking paper.
  3. I have baked 4 plates of the dough, always 30 stars on a plate. The number depends on the size of the cookie cutter.
  4. The cookies are baked in a preheated oven at 200 degrees for about 10 minutes. Careful, they burn up fast!
  5. After baking, let the cookies cool well.

Preparation of the filling:

  1. Cut 250g soft caramel sweets (such as Muh-Muhs) into small pieces.
  2. Heat 10 tablespoons of cream in a saucepan (do not boil) and dissolve the chopped caramel sweets and allow to cool.

Completion:

  1. On each cookie, with the help of a teaspoon, add a dollop of caramel cream and place a second one on top.
  2. I also painted some caramel cream on the top and decorated it with a chocolate nougat glaze. (Dissolve the bittersweet chocolate and cut - firm nut nougat mass in equal parts in a water bath.)
  3. Let the cookies dry and then you can enjoy them.
