Chocolate mint cake

This very chocolaty and crunchy-tasty box cake reminds with its touch of peppermint a little bit of "peppermint chocolate chip".

For a 35 cm box shape you need the following:

For the dough:

  • 250 g soft butter
  • 2 tablespoons oil
  • 250 g brown sugar
  • 6 eggs
  • 300 g spelled wholemeal flour
  • 1 pck of baking soda
  • 4 tablespoons of cocoa powder
  • 300 g crunchy chocolate-mint cereal
  • 300 ml of milk
  • Almond flakes for spreading the shape

For the chocolate sauce:

  • 100 g dark chocolate couverture
  • 100 g peppermint cream chocolate
  • 125 g of coconut oil

preparation

  1. Preheat the oven to 190 degrees top / bottom heat (convection: 175 degrees).
  2. Mix with the hand mixer the soft butter with the oil and the brown sugar and stir in the eggs one by one.
  3. Then mix the flour with baking powder and cocoa and add the crunchy chocolate-mint cereal.
  4. Mix this flour-cocoa-muesli mixture alternately with the milk with a mixing spoon under the butter-sugar-egg-mixture.
  5. Now pour the dough into the well-greased box-shaped tin sprinkled with almonds and place them on the middle rail in the preheated oven.
  6. The cake is baked for about 50 to 55 minutes (make a stick sample!).
  7. After baking, let it cool slightly in the mold, only then it is released from the mold and allowed to cool on a wire rack.
  8. For the chocolate sauce, couverture, chocolate and coconut fat are melted over a hot water bath and the cooled cake is covered with it. At will, the cake can be sprinkled with some cereal.

Tip: This cake tastes best only the next day, then he is properly pulled through!
