Chocolate Sorbet - vegan

Como agua para chocolate: Whether hot chocolate or chocolate ice cream. Water and chocolate are a perfect match and hardly need any other ingredients for the perfect enjoyment. Now that the first warm days have come and in many places the ice season has started, here is a recipe for chocolate sorbet (vegan).

Ingredients for 2 servings:

  • 1 bar of chocolate (bitter or half bitter)
  • 100 ml of water
  • possibly vanilla sugar
  • 1 pinch of salt

preparation

  1. In a pot of water and chocolate and possibly further ingredients warm until the chocolate melts, stir well.
  2. Fill sink 3 fingers high with cold water.
  3. Put the pot with chocolate-water-mass into the sink until the pot is cold.
  4. Refill sink or bowl with ice cubes, frozen ice packs and a little cold water.
  5. Put the pot in the ice.
  6. Using a whisk, whip up the chocolate until it has the consistency of cream (volume increases 1.5 to 2 times).
  7. Do not use an electric whisk in the sink, but only in extra bowl, e.g. on a cold pack! (See picture 4).
  8. Every now and then with the dough scraper to get the mass out of the corners.
  9. Fill the mass into a small bowl and place in the freezer for 10 minutes.
  10. If you have real ice cubes or crushed ice creams (no chillers), do not refrigerate in the freezer, but add a tablespoon of salt to the ice cubes, put the pot in and stir until the chocolate mass is frozen.
  11. Serve with chocolate skewers.

Last summer I got chocolate sorbet in the ice cream parlor on vacation and was really happy because chocolate ice cream without milk ingredients is really rare. I also wanted to try that at home. Normally you make sorbet with glucose (boil the same amount of sugar and water until everything has mixed well) and in addition to fruit juice or Fruchtmus also beaten egg whites. But that would be too much sugar and with raw eggs in the ice, the whole thing is very sensitive, so I have omitted on my first try protein and sugar. Without sugar, it was really very bitter. Something for purists.


Chocolate Vanilla Sorbet

On the second try I did a bag of vanilla sugar and they told my boys, they found it very tasty and asked in astonishment: "Only chocolate and water ?? It's really so creamy that you suspect cream or milk in it. After each 100g of chocolate sorbet, both were well-fed.

Chocolate and orange sorbet

In the third variant, I have replaced half of the amount of water with freshly squeezed orange juice and also added some orange peel. Upper Yummy! Unfortunately, I had no orange liqueur in the house, which would have been good for it. But there will be another next time. But I do not make the liqueur hot, but I draw a shot glass from the amount of liquid and add a shot glass of orange liqueur to the slightly cooled chocolate mass. Not that something goes by the precious alcohol! :-O

At the next try take coffee instead of water.

And next time, instead of vanilla sugar, sugar and cinnamon.

Chocolate praline sorbet

And then: 1 tablespoon of ground and roasted hazelnuts with it or the whole thing with back nougat (there is also dark baking nougat without milk).
