Colorful peasant pot without meat

As a kid, I was a lot on a farm. One pig was slaughtered there annually and one calf a year. In addition a few rabbits and poultry. But there were also many people to look after. That's why you've kept up with the use of meat. It was cooked with what the field and garden gave so. With a bit of bacon, maybe some meat, with offal, with eggs of course. But only with potatoes, cottage cheese and vegetables. Sure, there were recipes, but it is also certain that much was improvised. I have done that once now.
I started from what I had in the house. There were classic (peasant) vegetables, but also different things that used to be absent in the countryside, such as peppers, olive oil and red beans.

- 1/2 cabbage
- 300 g of celeriac
- 3 carrots
- 4 parsnips
- 2 balls of beetroot
- 500 g potatoes
- 3 onions
- 1 zucchini
- 3 pointed peppers
- 1 can of red beans
- 1/2 L vegetable stock
- 2 tbsp olive oil
- some thyme, parsley
- Pepper salt
preparation
- First I cleaned everything and cut into not too small ("bite-sized") pieces (also the cabbage). Then first the pepper pieces in the oil slightly sweated and taken out again.
- Then the onion cubes (usual size) are sweated, the root vegetables are added and stock is poured. After about 7 minutes, the potato pieces were added, then the cabbage and a little later the zucchini pieces.
- So that everything is cooked, but not overcooked, you have to pay a little attention to the different cooking times and try. For me, the whole thing took about 1 hour.
- In the end, I added the rinsed red beans, the pieces of pepper and the thyme, a little spiced and heated everything again. When serving sprinkle with chopped parsley.
It was delicious. 4 people are easily tired of it. If you really want to add meat or sausage, in whatever form, you are welcome to do so.
