Corn salad soup

ingredients

  • 3 handful of washed corn salad
  • about 25g smoked bacon
  • 1 tbsp butter lard
  • 1 medium potato (grated)
  • 1/2 half lemon (untreated)
  • about 0.15l dry white wine
  • 0.5l vegetable stock
  • 0,4l sweet cream
  • salt
  • black pepper

preparation

Dice the bacon, sauté with the lard and deglaze with the white wine. Add the vegetable stock and the cream, add the grated potato and simmer for about 5 minutes. Rub in some lemon rind and add the juice of half a lemon. Season with salt and pepper. Simmer briefly and then add the lamb's lettuce to the soup. Approximately Boil for 1 minute and then purée everything with a blender until the soup is creamy.
