Creamy carrot and potato soup

Here is a tip for a creamy delicious soup with potatoes, carrots and plenty of cream, which is also fast to prepare.

Usually we are not the big soup fans, but this one tastes very good to my men and me.

ingredients

  • 1 onion (I also like a red or vegetable onion)
  • 400 g of carrots in rough pieces
  • 400 g of potatoes in rough pieces
  • 3/4 L vegetable stock
  • 1 cup (200 g) cream
  • 1 bay leaf
  • Salt, pepper, lemon juice to taste

preparation

  1. Fry chopped onions (rings or cubes) in butter
  2. Add potatoes and carrots
  3. Add vegetable stock
  4. Bay leaf to it
  5. Simmer for 20 minutes (as the whole thing is mashed anyway, it does not have to be that exact)
  6. Pick out the bay leaf
  7. Purée everything with a blender
  8. Cup of cream
  9. Season with lemon juice, salt and pepper (I still add a bit of fire eaters (sparingly)


In my opinion, the great thing about the recipe is that you do not have to stick slavishly to the weight information, even with the proportions you can vary.
