Creamy cheesecake with cherry topping

  • 350 g cream cheese
  • 500 g quark
  • 250 g of yoghurt
  • 3 eggs
  • 100 g of sugar (have taken brown, but is also white)
  • 2 tablespoons cornstarch or custard powder
  • 250 g wholegrain biscuits, 1 pinch of salt
  • 100 g of butter
  • 100 ml of orange juice
  • 1 sachet of bourbon vanilla
  • 1 glass of sour cherries
  • 2 sachets of red cake icing
  • 2 tbsp sugar

preparation

1st step (1 day before)

  1. Crumble the biscuits, mix with salt and melted butter and place in a cake tin (26-28 cm), bake at 170 ° C for about 10 minutes
  2. Separate eggs, beat egg white with a pinch of stiff
  3. Beat the egg yolks with sugar until the sugar dissolves, gradually add all other ingredients (except cherries and icing), gently fold in the egg whites
  4. bake at 150 - 170 ° for about 40 minutes. Make sure that it is not too dark (possibly cover with baking paper). Then allow to cool completely in the oven (it may be that it breaks, but it is not bad)

2nd step (the next day)

  1. Drain the cherries and drain well
  2. Fill the cherry juice to 500 ml with water
  3. Prepare the cake according to the instructions, add the cherries to the cheesecake, then pour and allow to cool.

I made it for coffee for Christmas and it was really delicious and not so powerful. Surely you can also replace cream cheese with more yogurt, then he will be friendlier :)
Or you try it with reduced-fat cream cheese and lean quark.
