Creamy leek soup - ideal for "stretching"

This soup is simple, super delicious and ideal when unexpected guests come, as you can stretch them as often as you like.

You need

  • 1 pack of cured ham (that's already diced, available in most supermarkets)
  • 2 leeks or leeks (about 300 - 400g)
  • Mashed potatoes (which everyone probably has at home)
  • about 1 liter instant broth
  • 1 cup of sour cream or creme fraiche
  • nutmeg
  • Salt pepper

Sauté the ham, who likes it greasier, just take bacon strips and cut them small. Cut the leek into half rings and sauté. Then deglaze with broth, add some puree powder, so that the whole thing is thick, then add the cup sour cream or creme fraiche. If the whole thing is too thick or too thin - "pimp" with broth or mashed potato powder, so that everything is creamy. Now - who likes - season with nutmeg, salt and pepper.

You can stretch this soup to infinity and it is still delicious. ;O)
