Crispy cookies with spelled flour and seeds

I recently found this recipe in a magazine and had to try it out immediately, but I changed it a bit. The result is these very delicious crispy cookies, not too sweet and with good, healthy ingredients - I'm thrilled! Something so tasty for snacking, without having to have a guilty conscience!

For those who feel like baking, here is the recipe for about 24 cookies (2 baking trays):

ingredients

  • 125 g soft butter
  • 60 g of raw cane sugar
  • 1 pck of vanilla sugar
  • 1 egg
  • 250 g spelled wholemeal flour
  • ½ tsp baking powder
  • 1 pinch of salt
  • 60 g of bitter chocolate (at least 60% cocoa)
  • 25 g pumpkin seeds
  • 40 g sunflower seeds
  • a few dried cranberries as desired

preparation

The preparation is pretty fast!

  1. First, the soft butter with the raw cane sugar and the vanilla sugar is stirred creamy, then the egg is stirred under.
  2. Mix the flour with baking powder and salt and stir half of it under the butter-sugar mixture.
  3. Chocolate, pumpkin seeds and cranberries are roughly chopped and kneaded under the dough with the sunflower seeds and the remaining flour, either by hand or with the dough hooks of the hand mixer.
  4. On a lightly floured work surface, the dough is then formed into a roll about 5 cm in diameter, wrapped in cling film and placed in the refrigerator for one hour.
  5. The oven is preheated to 180 ° C top / bottom heat.
  6. The cooled dough roll is then cut into slices approximately 5 mm thick.
  7. You shape them a little bit and put them on a greased tray or with baking paper or baking foil, paint the surface lightly with water and sprinkle them with a few sunflower and pumpkin seeds.
  8. The baking time is 15 to 18 minutes on one of the lower rails in the preheated oven.
  9. Then let the cookies cool down a little before you take them carefully from the plate and let cool on a wire rack.
