What could be better than a delicious hot soup on cold days! I always cook our semolina dumpling soup according to this recipe, it tastes very good to us all.
ingredients

- 1.5 L broth
- some chives
- 2 eggs
- 100 g durum wheat semolina
- 1 pinch of nutmeg grated
- 3/4 teaspoon salt
- 25 g soft butter or margarine
- 300 ml of milk
preparation
- First of all, cook the meat broth in a saucepan.
- The milk is then boiled up with the butter, the salt and nutmeg, then the semolina comes slowly and everything is well stirred with a whisk to a solid mass.
- Remove the pot from the heat and stir the eggs well with the whisk again.
- Immediately with a teaspoon from the mass of small Nockerl stick out and insert into the boiling broth, which must go fast, so do not let the mass stand long.
- Now on medium level about 15 minutes covered simmer, without lid, they would be hard, so the pot should not be opened until the end.
- After cooking, remove the pot from the heat and let it steep for another 5 minutes, then arrange with some chives on plates.
