My tip is to make these formulas useful for those who need to avoid such goodies for health reasons. These include the diabetics in particular, as well as the overweight in general.
I want to introduce a sugar that you might have heard of before.
And the "Erithritol" ..., an alcoholic sugar that has no carbohydrates. But it looks exactly like sugar and almost tastes like it. A small disadvantage, unfortunately, it has only 77% of sweetness, compared to 100% of our usual table sugar. But it also has the calories that we do not need. To compensate, so we do not have to change the recipes and use this 0 calorie sugar 1: 1, we add to 990 grams of Erithritol, 10 grams of Stevia extract powder and mix it well.
Now we have a good, healthy 100% alternative to our table sugar. Now only needs to be processed into powdered sugar. This is done in a mixer (Mr.Magic mixer) or something.
Make chocolate
ingredients
For a basic recipe:
- 100 g unsweetened cocoa powder
- 250 g coconut oil (Palmin)
- 200 g of powdered sugar substitute (Erithritol + 1% Stevia)
- 1 vanilla pod
Additionally are required:
- a heat resistant silicone mold for the chocolate and
- a water bath pot
- 1 mixer

If you want to use cocoa butter that tastes better and is normally processed in chocolate, you must temper the chocolate mass before it is poured into the silicone molds. This is done by cooling the finished chocolate mass (approx. 45 ° C) to 20 ° C and then heating it to 33 ° C with dark chocolate, stirring constantly:
- at 31 ° C with light chocolate
- at 28 ° C with white chocolate
Then it's time, now pour the mass into the silicone molds, let it harden in the refrigerator and then enjoy without remorse ...

For the preparation of delicious chocolate, the coconut oil is heated in a water bath. When the fat has melted, the cocoa powder, powdered sugar and marrow are added to a vanilla pod, which are mixed with constant stirring.
Then pour the creamy mass into a silicone mold and put it in the fridge for about two hours. The chocolate can be served as soon as it is fully cured.
White and dark chocolate
For the production of white and dark chocolates, only the ingredients change, but the preparation remains the same.
For a dark chocolate
- 100 g of cocoa powder
- 150 g coconut oil (Palmin)
- 100 g of powdered sugar substitute (Erithritol + 1% Stevia)
- 1 vanilla pod
For a white chocolate
- 200 g of powdered sugar substitute (Erithritol + 1% Stevia)
- 200 coconut fat (Palmin)
- 1 vanilla pod
- 1 tbsp inulin (fiber without carbohydrates)
