Do not salt the eggplant

In almost all eggplant recipes it is advised to cut the aubergines into slices, salt them and leave them for 30 minutes to extract possible bitter substances. In most cases, however, the eggplants are not bitter at all. You save time, salt and vitamins, if you just try a tiny piece of eggplant instead. If you have caught a bitter, you notice it immediately. It has happened to me only once and we often eat aubergines. Now some will say eggplants are raw toxic. This only applies to immature aubergines, which contain the poison solanine, which is destroyed neither by salting nor by boiling.
